As the weather gets warmer, a tropical tart makes the perfect treat, and it doesn’t need to be complicated!
For this tasty tropical tart, start with crushing 1 ½ (35 mL) cups of vanilla cookies and mixing with ½ cup (125 ml) of shredded coconut, ¼ cup (60 mL) of sugar, and ½ (125 mL) cup butter for your crust. Press this mixture into a tart pan, and bake!
Combine two packages of cream cheese with ½ cup (125 mL) of powdered sugar, 2 tbsp (30 mL) of milk, and 1 tsp (5 mL) of coconut extract for your filling, and spread out over the baked and cooled crust.
Once the tart has cooled, channel your inner artist and arrange your fruits of choice on top. We love mango, kiwi, and strawberry!
